Menu: Aubergine
At the 1999 motss.con in
Memphis, TN, Saturday evening a group of ten of us went to Aubergine
for dinner. The meal was fantastic, and included:
- Appetizer--Roasted lamb on crouton with a rosemary-cream
sauce
- Salad--Lobster and cenellini bean salad with lime-mango
dressing
- Granita--Flavored ice, with port and cassis
- Wine--Sandford Pinot Noir
- Entrée--24-hour braised veal shoulder with babt
carrots, roasted potatoes, and a demi-glace reduction
- Dessert--A chocolate pyramid-shaped cake, filled with
warm chocolate fudge, served with chocolate sorbet on a chocolate
sauce with powdered sugar and mint to finish the presentation
- Digestif--20-year-old Sandemans ruby port
