Beef Barley Soup
Ingredients
- 1 small yellow or white sweet onion (or half a large one)
- 3 cloves of garlic
- 4 to 6 ounces of beef tenderloin tips
- 1 cup beef stock (no or low sodium)
- 5 cups water
- 0.5 cups pearl barley, washed under cold water
- Freshly ground black pepper
Instructions
- Peel and dice onion.
- Peel and dice (or press) garlic.
- Sauté onion and garlic until tender.
- Add beef tenderloin tips and brown on all sides.
- Gradually add beef broth and water.
- Add pearl barley.
- Grind fresh black pepper into the soup (about 1/4 to 1/2 tsp,
to taste).
- Bring to a boil.
- Reduce to a simmer and cover tightly.
- Cook at least 3 hours, until barley is tender.
- Serve with garlic toast and salad.
