Josh Play Recipes Soup French Onion Soup

Instructions

  1. Peel onions; cut off and discard root ends.
  2. Using a large French chef's knife, slice onions thinly.
  3. In a 4-quart saucepan, over medium-high heat, melt butter.
  4. Add onions and ground black pepper to butter.
  5. Sauté onion mixture until onions are a light golden brown.
  6. Sprinkle onions with flour and stir until all traces of flour disappear.
  7. Cook 1 minute longer, stirring constantly with a wooden spoon.
  8. Remove from heat.
  9. Gradually add beef broth to onions, stirring constantly.
  10. Stir in water and bay leaf.
  11. Return to medium-high heat and bring to a boil, stirring constantly.
  12. Reduce heat to low and cook uncovered for 30-40 minutes.
  13. Discard bay leaf.
  14. Taste soup and add salt and pepper if desired.
  15. Arrange toast slices on top of the soup. (Do not submerge them.)
  16. Sprinkle the toast liberally with the cheeses.
  17. Place individual onion soup bowls or broilerproof casserole 6-inches from heat source in preheated broiler
      or
    Preheat oven to 425 F and place bowls or casserole in oven.
  18. Broil or bake the soup until the cheese melts and turns golden brown.
  19. Remove from oven; serve immediately.
