Split Pea Soup with Ham
Ingredients
- 2 cups dried split peas, green or yellow or both
- 8 cups water (1)
- 2-3 pounds of boneless ham (optional)
- 1 medium yellow onion
- 2 cloves garlic
- 1/2 tsp Black pepper
- Dry sherry
Directions
- Sort through the split peas, removing any hulls or pebbles
that may have made it through the processing.
- Dice the onion.
- Mince the garlic.
- Dice or cube the ham. Cubes about 1cm square are great.
- Rinse the split peas under cold running water. Discard the
water.
- Mix the peas, onion, garlic, ham, pepper, and 8 cups of water
(1) in a
large pot, and bring to a boil.
- (Optional) Add a splash of dry sherry to the soup.
- Simmer no less than 2 hours.
You can add salt to taste, but the ham does that pretty well.
Serving Suggestions
- As an entrée--Serve with a small dollop of
sour cream, or with garlic bread, or a salad.
- As a first course--Serve with garlic croutons.

- You can substitute vegetable stock, chicken stock, ham stock,
beef stock, or other clear fluids. I've done this successfully
with 4 cups chicken stock and 4 cups water, and again with 4
cups beef stock and 4 cups water.
