Brown--Beef-based college student fare. Cajun Dirty Rice & Brown Poultry Stock--A cajun recipe for dirty rice, including the stock recipe that makes it fabulous. Cherry Turkey--A different take on Thanksgiving or Christmas turkey. Chicken Breasts Dianne--A wonderful chicken breast in a rich dijon/green onion/lemon sauce. Chicken Parmesan--A quick chicken parmesan recipe. Chicken Teriffic--Also known as Poulet de Norma Jean, this dish is a chicken in cream cider sauce. Cioppino--A spin on the San Francisco fish stew. Crab Casserole--A straightforward crab casserole from Bill Brockman. Crab Quiche--A good brunch dish from Bill Brockman. Cranberry Chicken--A quick recipe for chicken in a tangy cranberry sauce. Duck Confit--A yummy duck confit that can be served as an entrée on a buffet. French Onion Soup--A wonderful hearty onion soup, and one of my all-time favorites. Greek-style Shrimp with Feta and Oregano--Shrimp and feta cheese with fresh oregano is a great dish over rice, orzo, or pasta. Latkes--A basic recipe for potato latkes, a traditional Chanukkah dish. Lemon-Dijon Chicken--A quick recipe for chicken that takes less than 20 minutes, preparation to serving. Macaroni and Cheese Deluxe--One of the better recpies I've found for macaroni and cheese that doesn't include powdered cheese. Mastacioli--A recipe for a quick and easy mastacioli, penne rigate pasta slow-cooked in a hearty beef-and-sausage-based sauce. Mineralesque Shrimp--A complex-tasting but easy-to-make shrimp dish. Nachos Supreme--A basic recipe for beef and bean nachos supreme. Penne a la Vodka--An interesting sauce for pasta. Peppery Garlic Shrimp with Sherry Sauce--A spicy shrimp and garlic recipe. Pork in Beer Sauce--German pork tenderloin in a beer and onion sauce, with sauteed apples. Pork Stew--A spicy Jamaican pork stew. Raspberry Chicken--Sarah's fabulous chicken breasts in a raspberry cream and onion sauce that even a non-chef can make. Salmon Dianne--A wonderful salmon filet in a rich dijon/green onion/lemon sauce. Salmon Steaks--A poached salmon steak recipe from Julia Child. Salsa Wraps--A recipe combining salsa, leftover rice, and cheese that's quick and painless to make. Satay Style Barbecued Pork--A spicy Thai pork dish. Sezchuan Chicken--A spicy Chinese chicken dish. Shrimp Fried Rice--A nice Chinese shrimp fried rice recipe that can be used with more vegetables, beef, chicken, or pork, that can be served as a side dish or as an entrée. Split Pea Soup with Ham--A hearty soup for fall or winter, servable as a first course or as an entrée. Taste of Texas Shrimp and Pasta Salad--A light dinner entree perfect for summer nights. Turkey--The typical holiday turkey. Yellow--Chicken-based college student fare.
